Hunter Bay Coffee

100% Organic Ethiopia is Hunter Bay’s sweetest coffee: naturally processed, and sun-dried with just-brewed intense aromas of ripe blueberries and highlights of dried citrus peel. The lean texture and medium body of this unique coffee delivers intense, ripe, dark-berry accents in jammy layers that convert into denser, richer flavors of semisweet chocolate, vanilla and toasted nuts. Its finish is sweet, long and exceptionally clean.

In Ethiopia, coffee is cultivated on tiny terraced farms located in steep mountainous canyons at elevations of up to 8500 feet. Because of the high cost of synthetic fertilizers, herbicides and pesticides, farmers have historically relied on natural practices to farm, process and sun-dry their crop. During the coffee season teams of donkeys stream into local markets where farmers deliver un-husked dry coffee cherries to local purchasing agents. Only recently have Ethiopian farmers been able to develop the harvest systems required to qualify their coffees as certified organic, but the best Ethiopian coffees have always had the intense fruit flavors of tree-ripened, naturally dried coffee.

Roasting Notes:
We take Ethiopia Organic to a deep brown medium roast to capitalize on the coffee’s ripe berry notes, which develop intense sweet jam accents over the fuller vanilla-chocolate flavors that emerge with successive sips.

Tasting Notes:
Aroma – Intense blueberry aromas with accents of dried citrus peel.
Acidity – Ripe berry brightness develops quickly into rounder accents.
Flavor – Sweet, jammy notes of dark berries over fuller flavors of vanilla, dark chocolate and toasted nuts.
Body – Lean, concentrated and syrupy without overt thickness.
Aftertaste – Blueberry, dark chocolate and toasted nuts.
Balance – Round & fruity up front with dark chocolate & toasted nut finish.
