Medium Roast: Hunter Bay’s 100% Organic Fair Trade Ethiopia is a naturally processed genuine Mocha coffee from the Harar region of southeastern Ethiopia – a fine example of these famous coffees valued worldwide for their full blueberry bouquet, lively sweetness, lean consistency and great taste.
Ethiopia Harar coffees are cultivated on tiny terraced farms located in steep mountainous canyons at elevations of up to 8500 feet. Because of the high cost of synthetic fertilizers, herbicides and pesticides, farmers have historically relied on natural practices to farm, process and sun-dry their crop. During the coffee season teams of donkeys stream into local markets where farmers deliver un-husked dry coffee cherries to local purchasing agents. Only recently have Ethiopian farmers been able to develop the harvest systems required to qualify their coffees as certified organic, but the best Harars have always had the intense fruit flavors of tree-ripened, naturally dried coffee.
Roasting Notes:
We slow-roast Ethiopia to a deep brown Viennese roast to capitalize on the coffee’s ripe berry notes. At the medium roast the coffee’s palate of blueberry and spice is fully aromatic and dense with the flavors of ripe berries, chocolate and dried fruit.
Tasting Notes:
Aroma – A suffusion of sweet blueberries with hints of lemon spice.
Acidity – Light, lemony highlights giving way quickly to sweet berry notes.
Flavor – Assertively focused, winey, and concentrated dried blueberry flavors.
Body – Lean, concentrated and muscular without overt thickness.
Aftertaste – Blueberry, spice and honey.
Balance – Dense, full flavor with pleasing berry highlights.
