Mexico ChiapasSingle Origin Coffees
This is our smoothest light roasted coffee we offer. The smoothness comes from it's low acidity and chocolate notes. This Mexico Chiapas is a fully washed and sundried coffee of the Bourbon, Caturra, and Catuai varieties. The coffee is grown in a warm climate at an altitude of 1200-1500 MASL.
It oozes with hints of cinnamon spice and brown sugar up front and finishes on smooth notes of chocolate and lemon. What an elegant coffee! At the roastery, here in Missoula, Montana, this coffee ranks at the top amongst our staff, in terms of smooth and gentle flavor and body

Aroma – Cinnamon & chocolate
Acidity – Low acidity but accentuated by brown sugar & spiciness
Flavor – A pleasing intermingling of spicy highlights with full, smooth nutty finish
Body – Medium body, syrupy mouth feel
Aftertaste – Sweet, lingering flavors of nuttiness
Balance – Sweet & spicy up front and a smooth finish
